Why Proofing Temperature Makes or Breaks Your Sourdough

You follow the recipe. You use good flour. You feed your starter on schedule. But the loaf still comes out gummy in the middle or flat on top. More often than not, the culprit is not your technique. It is the temperature of the space where your dough is sitting.

Proofing temperature controls how fast your wild yeast and bacteria work. Speed them up too much and you get over-fermented dough that collapses in the oven. Slow them down too much and the loaf never develops the structure it needs to hold its shape. The window between those two outcomes is smaller than most home bakers realize.

What Happens Inside the Dough as It Proofs

Sourdough fermentation is driven by two things working together: wild yeast producing carbon dioxide to create rise, and lactic acid bacteria producing acids that build flavor and tighten gluten. Both are temperature-sensitive, but they respond differently to heat.

Wild yeast becomes most active somewhere between 75 and 95 degrees Fahrenheit. Lactic acid bacteria, which produce the milder, more approachable flavor, tend to thrive closer to 75 to 85 degrees. Acetic acid bacteria, responsible for sharper tang, prefer cooler and drier conditions. This means the temperature you choose during bulk fermentation and final proof is not just about timing. It is about what the finished loaf will taste like.

A dough proofed at 80 degrees will ferment faster than one proofed at 70 degrees, but the flavor profile will also be different. Neither is wrong. Both are choices. The problem is when the temperature is not actually what you think it is.

The Hidden Problem with Guessing Your Kitchen Temperature

Most home kitchens swing several degrees throughout the day. Morning is cooler. Afternoon near the oven is warmer. In winter, a drafty counter can drop the surface temperature of your banneton below 65 degrees without you noticing. In summer, a warm kitchen can push fermentation faster than your recipe expects.

A cold retard at 38 to 40 degrees slows fermentation almost to a stop, which makes timing more flexible and tends to improve crust color and ear development during baking.

Humidity matters during proofing too, especially for open-air proofing baskets. Dry air forms a skin on the dough surface that restricts expansion. A relative humidity between 75 and 85 percent during bulk fermentation keeps the dough surface pliable and supports a better final oven spring.

How to Start Baking with More Control

The first step is simply knowing what your environment is doing. Put a thermometer near your proofing dough for a full day and note the swings. Most bakers are surprised by how much variation exists in a space that feels stable.
